Ingredients
Cookie Dough
- cups rolled oats old fashioned
- cup vanilla protein powder favorite brand
- cup peanut butter smooth
- cup honey or maple syrup
- cup mini chocolate chips optional
Ice Cream Filling
- cup vanilla frozen yogurt slightly softened
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment.
- Mix oats, protein powder, peanut butter, honey, and chocolate chips until a thick, slightly sticky dough forms.
- Scoop dough onto the tray and gently flatten each mound for even baking and soft centers.
- Bake for 10 to 12 minutes until edges look golden and centers remain tender. Cool completely.
- Spread frozen yogurt between two cookies for an Ice Cream Cookie Bristle Cookie variation, then freeze until firm.
