Ingredients
  

Cookie Dough

  • cups rolled oats old fashioned
  • cup vanilla protein powder favorite brand
  • cup peanut butter smooth
  • cup honey or maple syrup
  • cup mini chocolate chips optional

Ice Cream Filling

  • cup vanilla frozen yogurt slightly softened

Instructions
 

  • Preheat oven to 350°F and line a baking sheet with parchment.
  • Mix oats, protein powder, peanut butter, honey, and chocolate chips until a thick, slightly sticky dough forms.
  • Scoop dough onto the tray and gently flatten each mound for even baking and soft centers.
  • Bake for 10 to 12 minutes until edges look golden and centers remain tender. Cool completely.
  • Spread frozen yogurt between two cookies for an Ice Cream Cookie Bristle Cookie variation, then freeze until firm.

Notes

Bake less for softer cookies or slightly longer for crispier edges. Freeze baked cookies or assembled sandwiches in airtight containers. Chill filling and work quickly during assembly. Swap flavors with cinnamon, nuts, or dried fruit. Store at room temperature for three days or freeze for two months.
