Keto Stuffed Peppers
Ingredients
- 4 bell peppers
- 1 lb ground beef or plant-based option
- 1/2 cup cauliflower rice
- 1/2 cup shredded cheese
- 1/4 cup chopped onion
- 2 cloves garlic minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup tomato sauce
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove seeds. Set aside.
- Heat olive oil in a skillet over medium heat. Add garlic and onion, cook until softened.
- Add ground beef (or plant-based option) to the skillet. Cook until browned.
- Stir in cauliflower rice, chili powder, cumin, salt, pepper, and tomato sauce. Simmer for 5 minutes.
- Stuff the peppers with the beef mixture.
