Keto Chocolate Peanut Butter Cups
Ingredients
- 1 cup natural peanut butter smooth or crunchy
- ½ cup coconut oil melted
- ⅓ cup cocoa powder
- ¼ cup powdered erythritol or preferred keto sweetener
- 1 tsp vanilla extract
- Pinch of sea salt
Instructions
- Mix peanut butter, half the coconut oil, sweetener, and vanilla until smooth.
- In another bowl, combine cocoa powder and remaining coconut oil.
- Spoon chocolate mixture into molds, about one-third full; freeze 5 minutes.
- Add peanut butter layer, then top with remaining chocolate mix.
- Freeze 30 minutes or until firm.
- Pop out cups and store in the fridge.
