Ingredients
  

Cookie Dough

  • 2 cups almond flour finely ground
  • 1/2 cup butter softened
  • 1/2 cup granulated keto sweetener
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup sugar free chocolate chips optional

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  • Cream butter and sweetener until fluffy. Mix in egg and vanilla until smooth.
  • Add almond flour, baking powder, and salt. Stir gently until a soft dough forms, then fold in chocolate chips if using.
  • Scoop dough onto the tray, leaving space between each mound. Flatten slightly for even baking.
  • Bake until the edges turn lightly golden and the centers look set but soft.
  • Cool on the tray for several minutes, then transfer to a rack. Enjoy warm or chill for a firmer texture.

Notes

For softer cookies, bake slightly less and cool completely. For crispier edges, bake one to two minutes longer. Freeze shaped dough for quick baking later. Chill dough if assembly becomes sticky.
