Ingredients
  

  • 1 lb vegan beef substitute seitan, soy curls, or mushrooms
  • 3 cups broccoli florets
  • 1/2 cup low-sodium soy sauce or tamari
  • 1/4 cup vegetable broth
  • 2 tbsp sesame oil
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tbsp rice vinegar
  • 1 tsp ground black pepper
  • 1 tsp xanthan gum optional, for thickening

Instructions
 

  • Toss vegan beef substitute with garlic, ginger, soy sauce, rice vinegar, and black pepper.
  • Place mixture in crockpot.
  • Add vegetable broth and sesame oil.
  • Cover and cook on low for 3 hours.
  • Add broccoli florets during last 30 minutes of cooking.
  • If desired, sprinkle xanthan gum and stir to thicken sauce before serving.
