  • ¾ cup dark chocolate dairy-free, melted
  • 1 teaspoon coconut oil

Instructions
 

Step 1: Make the Coconut Filling

  • Mix shredded coconut, maple syrup, vanilla extract, and salt in a bowl.
  • Add melted coconut oil and stir until the mixture sticks together.
  • Scoop and roll into small balls (about 1-inch wide).
  • Place on a parchment-lined baking sheet and freeze for 10 minutes.

Step 2: Prepare the Chocolate Coating

  • Melt chocolate with coconut oil using a microwave or double boiler.
  • Stir until smooth and glossy.
  • Step 3: Coat & Set
  • Dip each coconut bite into melted chocolate, ensuring full coverage.
  • Let excess chocolate drip off, then return to the parchment-lined sheet.
  • Chill in the fridge for 5 minutes until set.
