Crockpot Vegan Black Bean Soup
This black bean soup does all the work while you take the credit. It’s thick, hearty, and packed with protein, fiber, and actual flavor. The crockpot handles everything—no stirring, no boiling over, no kitchen disasters. Just dump the ingredients, walk away, and return to a perfectly seasoned soup. It’s smoky, a little spicy, and ridiculously satisfying. Eat it as is, blend it smooth, or top it with avocado and lime. Either way, it’s proof that comfort food doesn’t need dairy, meat, or effort. Bonus: it tastes even better the next day, assuming you don’t eat it all immediately.
