Ingredients
  

  • Vegan salmon fillets soy or pea protein based: 220 g
  • Sweet potato peeled and cubed: 2 cups
  • Olive oil: 2 tbsp
  • Garlic powder: ½ tsp
  • Smoked paprika: 1 tsp
  • Black pepper: ½ tsp
  • Salt: ¾ tsp
  • Lemon juice: 1½ tbsp
  • Dijon mustard: 1 tsp
  • Fresh dill or parsley chopped: 2 tbsp

Instructions
 

  • Preheat oven to 200°C.
  • Add sweet potato using 2 cups to a bowl.
  • Toss with 1 tbsp olive oil, paprika, salt, and pepper.
  • Spread evenly on a baking tray.
  • Roast 20 minutes, flipping once until golden.
  • Heat remaining oil in a pan over medium heat.
  • Add vegan salmon using 220 g carefully.
  • Season with garlic powder, salt, and pepper.
  • Cook 3–4 minutes per side until heated and lightly crisp.
  • Mix lemon juice and mustard in a small bowl.
  • Drizzle sauce over salmon.
  • Serve salmon alongside roasted sweet potatoes.
  • Garnish with fresh herbs and serve warm.
