Protein Lentil Balls Recipe
Ingredients
- Cooked lentils brown or green: 1½ cups
- Breadcrumbs: ½ cup
- Onion finely chopped: ½ cup
- Garlic minced: 1 tbsp
- Olive oil: 1½ tbsp
- Cumin powder: 1 tsp
- Smoked paprika: 1 tsp
- Black pepper: ½ tsp
- Salt: ¾ tsp
- Fresh parsley chopped: 2 tbsp
- Lemon juice: 1 tsp
Instructions
- Add lentils using 1½ cups to a bowl.
- Mash lentils until chunky, not smooth.
- Add onion, garlic, breadcrumbs, parsley, lemon juice, salt, and spices.
- Mix until the mixture holds together easily.
- Shape mixture into small balls, about 1½ tbsp each.
- Heat oil in a pan over medium heat.
- Place balls gently in the pan, spacing evenly.
- Cook 3–4 minutes per side until golden and crisp.
- Remove and rest briefly before serving.
