25g Protein Holiday Casserole Recipe
Ingredients
For the Casserole Base
- Firm tofu crumbled: 200 g
- Cooked lentils: 1 cup
- Green beans chopped: 1 cup
- Mushrooms sliced: 1 cup
- Onion diced: ½ cup
- Olive oil: 1 tbsp
For the Creamy Sauce
- Unsweetened soy milk: 1 cup
- Cashew butter: 2 tbsp
- Nutritional yeast: 2 tbsp
- Cornstarch: 1 tbsp
- Garlic powder: 1 tsp
- Black pepper: ½ tsp
- Salt: ¾ tsp
For the Topping
- Rolled oats: ¼ cup
- Breadcrumbs vegan: ¼ cup
Instructions
- Preheat oven to 190°C and lightly grease the baking dish.
- Heat olive oil in a pan, sauté onion and mushrooms until soft.
- Add tofu, lentils, and green beans, stirring for 3 minutes.
- Whisk soy milk, cashew butter, yeast, cornstarch, garlic powder, salt, and pepper.
- Pour sauce into the pan and cook until thickened.
- Transfer mixture to baking dish and spread evenly.
- Sprinkle oats and breadcrumbs on top.
- Bake for 25 minutes until golden and bubbling.
