Ingredients
  

  • Sweet potatoes peeled and cubed: 2 cups
  • Silken tofu: ½ cup
  • Unsweetened almond milk: ¼ cup
  • Nutritional yeast: 1½ tbsp
  • Olive oil or vegan butter: 1 tbsp
  • Cinnamon powder: ¼ tsp
  • Garlic powder: ¼ tsp
  • Salt: ¾ tsp
  • Black pepper: ¼ tsp
  • Fresh parsley or chives chopped: 1 tbsp

Instructions
 

  • Add sweet potatoes to a saucepan and cover with water.
  • Boil for 18–20 minutes until fork-tender, then drain completely.
  • Transfer potatoes to a bowl with silken tofu and almond milk.
  • Mash until smooth and creamy.
  • Stir in nutritional yeast, oil, cinnamon, garlic powder, salt, and pepper.
  • Adjust texture with extra milk if needed.
  • Garnish with herbs and serve warm.
