Broccoli Soup Recipe
Ingredients
- 2 cups broccoli florets
- 1 tablespoon olive oil
- 1 small onion chopped
- 2 garlic cloves minced
- 1 cup potatoes diced
- 2 cups vegetable broth
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon cumin
- 1 tablespoon lemon juice
- 2 tablespoons nutritional yeast optional for cheesy flavor
Instructions
- Heat oil in pot.
- Add onion.
- Stir two minutes.
- Add garlic.
- Add potatoes.
- Add broccoli.
- Pour vegetable broth.
- Add salt.
- Add pepper.
- Add cumin.
- Stir gently.
- Bring to boil.
- Simmer ten minutes.
- Turn off heat.
- Blend mixture.
- Return to pot.
- Add lemon juice.
- Add nutritional yeast.
- Stir well.
