  • 1 cup water
  • 1 cup coconut milk
  • ½ cup chopped tomatoes
  • ¼ cup chopped onions
  • 1 tablespoon oil
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • 1 teaspoon curry powder
  • ½ teaspoon turmeric
  • ½ teaspoon cumin
  • ¼ teaspoon pepper
  • ½ teaspoon salt
  • 1 tablespoon lemon juice
  • Fresh coriander for garnish

Instructions
 

  • Rinse lentils well.
  • Heat oil in a pot.
  • Add onions, garlic paste, and ginger paste.
  • Cook 2 minutes until fragrant.
  • Add tomatoes.
  • Stir and cook 3 minutes.
  • Add curry powder, turmeric, cumin, pepper, and salt.
  • Mix well.
  • Add lentils and water.
  • Simmer 15 minutes.
  • Add coconut milk.
  • Cook 5 minutes until creamy.
  • Add lemon juice.
  • Garnish with coriander.
