Ingredients
  

  • Sweet potatoes – 4 medium about 2 lbs, peeled and cubed
  • Olive oil – 2 tbsp
  • Maple syrup – 3 tbsp
  • Cinnamon – ½ tsp
  • Salt – 1 tsp
  • Black pepper – ½ tsp
  • Fresh thyme – 1 tsp chopped (optional garnish)

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Line baking sheet with parchment paper.
  • In a bowl, combine sweet potatoes, olive oil, maple syrup, cinnamon, salt, and pepper.
  • Toss until evenly coated.
  • Spread potatoes in a single layer on baking sheet.
  • Roast 30–35 minutes, flipping halfway, until caramelized and tender.
