Ingredients
  

  • 1 cup firm tofu crumbled (vegan beef swap)
  • ½ cup chopped onions
  • ½ cup diced bell peppers
  • ½ cup mushrooms sliced
  • 1 tablespoon olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon cumin
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped parsley

Instructions
 

  • Heat a skillet and add 1 tablespoon olive oil.
  • Add onions and sauté for 3 minutes until soft.
  • Stir in bell peppers and mushrooms.
  • Add crumbled tofu and cook 3 minutes.
  • Mix in soy sauce, chili powder, smoked paprika, cumin, pepper, and salt.
  • Cook 4 more minutes until browned and fragrant.
  • Finish with lemon juice and parsley.
