25g Protein Beef Meatloaf Recipe
Ingredients
- Vegan beef-style mince soy or pea protein: 450 g
- Rolled oats: ½ cup
- Unsweetened soy milk: ½ cup
- Onion finely chopped: ½ cup
- Garlic minced: 1½ tsp
- Tomato paste: 2½ tbsp
- Soy sauce: 1 tbsp
- Olive oil: 1 tbsp
- Smoked paprika: 1 tsp
- Black pepper: ½ tsp
- Salt: ¾ tsp
- Ground cumin: ½ tsp
- Ground flaxseed: 1 tbsp
- Water: 3 tbsp
Instructions
- Preheat oven to 180°C and lightly grease a loaf pan.
- Combine flaxseed and water, rest five minutes until thickened.
- Add mince, oats, onion, garlic, milk, flax mixture, spices, oil, and soy sauce to bowl.
- Mix gently until evenly combined, avoiding overworking the mixture.
- Press mixture firmly into loaf pan and spread tomato paste across the surface.
- Bake for 40 minutes, rest five minutes, then slice cleanly.
