Ingredients
  

  • Desiccated coconut unsweetened: ¾ cup
  • Rolled oats: ¾ cup
  • Coconut flour: ¼ cup
  • Plant-based vanilla protein powder: ¾ cup
  • Coconut oil melted: 2 tbsp
  • Maple syrup: ¼ cup
  • Coconut milk thick: ¼ cup
  • Baking powder: ½ tsp
  • Vanilla extract: 1 tsp
  • Salt: a pinch

Instructions
 

  • Preheat oven to 180°C and line baking tray with parchment paper.
  • Add coconut, oats, coconut flour, protein powder, baking powder, and salt to a bowl.
  • Mix coconut oil, maple syrup, coconut milk, and vanilla separately until smooth.
  • Combine wet ingredients with dry mixture to form thick dough.
  • Divide dough into six portions and flatten gently on tray.
  • Bake for 12 minutes until edges turn lightly golden.
  • Cool briefly before serving.
