Keto Zucchini and Chicken Casserole

Keto Zucchini and Chicken Casserole

Let’s be honest—zucchini needs a wingwoman. Enter: this keto zucchini and “chicken” casserole (spoiler alert, it’s vegan, don’t faint). It’s hearty, cheesy, and protein-packed without dragging in actual poultry. You still get comfort, flavor, and a dish that says, “I’m health-conscious, but still fun at dinner parties.” It’s low-carb, gluten-free, dairy-free, and proudly judgment-free. Serve it hot, smug, and with a sprinkle of nutritional yeast like the wellness goddess you are. One bite, and even meat-lovers will say, “Wait… this is vegan?” Yes, girl. Yes, it is. And yes, you made it.
