Vegan Avocado and Chickpea Salad
Ingredients
- 1 ripe avocado
- 1 can 15 oz chickpeas, drained and rinsed
- 1 tbsp lemon juice
- 1 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp red pepper flakes optional but recommended
- 2 tbsp chopped fresh parsley
- ½ small red onion finely chopped
- 1 small cucumber diced
- 1 medium tomato diced
Instructions
- Add chickpeas to a mixing bowl and mash with a fork until chunky.
- Scoop avocado in and mash it together with the chickpeas.
- Drizzle in lemon juice and olive oil.
- Stir in garlic powder, salt, black pepper, and red pepper flakes.
- Add chopped parsley, red onion, cucumber, and tomato. Mix well.
- Taste and adjust seasoning if needed.
- Serve as is, or stuff it into a sandwich, wrap, or lettuce cups.
