  • Silken tofu blended smooth: ½ cup
  • Olive oil: 1 tbsp
  • Lemon juice: 1½ tbsp
  • Garlic minced: 1 tsp
  • Cucumber grated and squeezed: ½ cup
  • Fresh dill chopped: 2 tbsp
  • Fresh parsley chopped: 1 tbsp
  • Salt: ½ tsp
  • Black pepper: ¼ tsp

Instructions
 

  • Add vegan yogurt and blended tofu to a mixing bowl.
  • Whisk until smooth and thick.
  • Add olive oil, lemon juice, garlic, salt, and pepper.
  • Mix until fully combined.
  • Fold grated cucumber gently into the mixture.
  • Add dill and parsley evenly.
  • Taste and adjust seasoning if needed.
  • Chill 10 minutes for best texture.
