Protein Coconut Cookies Recipe
Ingredients
- Desiccated coconut unsweetened: ¾ cup
- Rolled oats: ¾ cup
- Coconut flour: ¼ cup
- Plant-based vanilla protein powder: ¾ cup
- Coconut oil melted: 2 tbsp
- Maple syrup: ¼ cup
- Coconut milk thick: ¼ cup
- Baking powder: ½ tsp
- Vanilla extract: 1 tsp
- Salt: a pinch
Instructions
- Preheat oven to 180°C and line baking tray with parchment paper.
- Add coconut, oats, coconut flour, protein powder, baking powder, and salt to a bowl.
- Mix coconut oil, maple syrup, coconut milk, and vanilla separately until smooth.
- Combine wet ingredients with dry mixture to form thick dough.
- Divide dough into six portions and flatten gently on tray.
