25g Protein Quinoa Sweet Potato Recipe
Ingredients
- Sweet potato peeled and cubed: 2 cups
- Quinoa dry: ¾ cup
- Cooked lentils: 1 cup
- Olive oil: 2 tbsp
- Garlic powder: ½ tsp
- Smoked paprika: 1 tsp
- Cumin powder: ½ tsp
- Black pepper: ½ tsp
- Salt: ¾ tsp
- Lemon juice: 1 tbsp
- Fresh parsley or cilantro chopped: 2 tbsp
Instructions
- Preheat oven to 200°C.
- Add sweet potato using 2 cups to a bowl.
- Toss with 1 tbsp olive oil, paprika, salt, and pepper.
- Spread evenly on a baking tray.
- Roast 20 minutes, flipping once.
- Rinse quinoa and add ¾ cup quinoa to a saucepan.
- Add 1½ cups water, bring to boil, then simmer 12 minutes.
- Heat remaining oil in a pan over medium heat.
- Add lentils using 1 cup, cumin, and garlic powder.
- Cook 4–5 minutes until warm and fragrant.
- Combine quinoa, lentils, and roasted sweet potatoes.
- Finish with lemon juice and herbs.
