  • Sweet potato peeled and cubed: 2 cups
  • Olive oil: 2 tbsp
  • Garlic powder: ½ tsp
  • Smoked paprika: 1 tsp
  • Soy sauce or tamari: 1 tbsp
  • Black pepper: ½ tsp
  • Salt: ½ tsp
  • Cumin powder: ½ tsp
  • Lemon juice: 1 tbsp
  • Fresh parsley or cilantro chopped: 2 tbsp

Instructions
 

  • Preheat oven to 200°C.
  • Add sweet potato using 2 cups to a mixing bowl.
  • Toss with 1 tbsp olive oil, paprika, salt, and pepper.
  • Spread evenly on a baking tray.
  • Roast 20 minutes, flipping once until golden.
  • Heat remaining oil in a pan over medium heat.
  • Add tofu using 250 g carefully.
  • Season with garlic powder, cumin, and soy sauce.
  • Cook 6–7 minutes, turning gently until crisp edges form.
  • Finish tofu with lemon juice.
  • Combine tofu with roasted sweet potatoes.
  • Garnish with fresh herbs and serve warm.
